Cupcakes!


So, if you thought this was rainbow frosting then you are pretty gullible.  Do you believe everything the interwebs tell you?  This is in fact, rainbow cupcake batter!



 My mom has taught me many things over the past 25 years and making rainbow cakes and decorating them happens to be one of my favorites!



I absolutely love how these turned out!

They are so perfect for this little hippie.  :-)

 

 I used these silicone baking cups which I liked and disliked at the same time.  They were kind of small which meant more cupcakes but they also did not peel off very well.  Not too much of a problem according to everyone who tried them, but not quite what I expected. 
But who wants to hear about that when they can see the finished product?

Well, here you go!



 I only used 2 bags for the frosting and I didn't clean out the tips every time I switched colors which resulted in some pretty cool effects.  Like the green swirled in the blue on the bottom right cupcake.  And the heart changing colors on the bottom left.

And just for good measure, a couple of the other rainbow cupcakes.  Hope you enjoy!






























The batter bubbled up and created these little blobs!  Teehee.  Ok, I'm done.  Really.  Really.

  1. Those are lovely! I'm trying to do better about cooking and baking (instead of just buying pre-made stuff. I received some lovely cooking tools for Christmas. I'll give these a shot very soon!

  3. I used a recipe from the Joy of Vegan Baking for Vanilla Cupcakes (I'm pretty sure that is what they were called). It was a pretty good recipe for giving to non vegans who are used to white flour and granulated sugar. Definitely only a once in a while kind of recipe but good.

    I absolutely love baking. Sometimes I wish I could do it 24/7. All I'd need is someone else to clean up the kitchen when I was done.

  4. Thanks for the source. I like baking but it's not my strong suit. I'm better at cooking (at least I like to think so :-)

    My other half is diabetic so if I bake regular recipes, I'm on my own (which is good and bad). I use Splenda in lieu of sugar sometimes so he can have a treat, too, but I don't like to think much about the process that is needed to create Splenda.
